Avocado and Pesto dip (high protein)

I love avocado and I love pesto, which is why I though I’d combine the two. Have you ever noticed how pesto really goes with everything? Think eggs, sanwiches, pasta, veggies, fish or chicken, salads etc. Same goes for avocado! Some people even add them to their oats or chia pudding (have yet to try that out). As you could have probably guessed, the combination is heavenly! The dip is sort of an alternative to guacamole and it is higher in protein because I added Skyr (sort of the Islandic equivalent to Quark). It goes perfectly with tortilla chips, on sandwiches, with salads, crackers, sweet potato wedges or some fish. Enjoy!

You’ll need 

Serves 2 to 3 people

  • 3/4 of an avocado ( I don’t know if I need to specify this, but buy ripe ones!)
  • 170g of Skyr, Quark or Greek Yogurt
  • 1 1/2 tablespoons of pesto
  • 2 teaspoons of chili flakes
  • Pepper and sea salt

Blend everthing together and top with some more pesto, chilli flakes and sea salt to serve!
